Cream Honey

Hi, we planted an Oxydendrum arboreum years ago that in blooming right now
(in N New Jersey) That's how I heard about the honey. The taste is wonderful,
but we prefer cream honey, that's how we grew up. Is there a way to cristalize it? I put it in the fridge. How long does it take?
