Keeping the bigger bits in is an unbolted (unsifted) approach that creates coarser, higher fiber cornmeal some call old fashioned and everyone calls delicious!

Best cornmeal

I don't make cornbread without 1830 grind unbolted cornmeal. It always comes out moist, but not soggy. It holds together without crumbling. It has a rich taste and texture.
