Cracked Wheat Flour

When I started my journey with making sour dough bread my daughter gifted me the Old Mill Cracked Wheat Flour. The whole family, even the ones that do not like cracked or whole wheat bread, LOVE the bread made with this flour! I have gifted this flour to a couple of people that have started to make sour dough bread. Loaf pan: 400 grams white bread flour, 100 grams cracked wheat, 125 grams starter, 352 grams water, 10 grams salt. Boule: 400 grams white bread flour, 100 grams cracked wheat, 125 grams starter, 332 grams water, 10 grams salt (test your white flour for window paining it may handle more hydration).

I bought the Cracked Wheat this past summer while on vacation in Tennessee. I have been tweeting my sourdough bread recipe using different flours and mixtures. I finally came up with a recipe that gives me the hydration that I have been looking for, as well as the texture that I wanted. I now use 400 grams of unbleached flour and 50 grams of the Old Mill Cracked Wheat. I am thrilled with how this sourdough mixes, bakes and best of all, tastes!
