Keeping the bigger bits in is an unbolted (unsifted) approach that creates coarser, higher fiber cornmeal some call old fashioned and everyone calls delicious!

Used this for years

I have been using Old Mill unbolted white cornmeal for many years, it makes the BEST cornbread EVER! BUT..I keep mine in the freezer, ALWAYS...and it stays fresh for a whole year!

HAD BUGS IN IT, AFTER AWHILE

It was great for awhile; cornbread was delicious. I don't make cornbread often. After receipt of this cornmeal, I kept it in an airtight container, in the cabinet, still in its own bag. The last time I opened the container, within 3 months, to make cornbread, it was swarming with bugs. The container was not kept in the refrigerator nor in the freezer.
